Combining the best of Fino and Oloroso sherries, the two very different ageing processes found in Jerez Amontillados (biological and oxidative) ensure an elegant and rounded sherry.
It has the aroma of hazelnut shells, incense, vanilla, aromatic herbs, and black tobacco. This sherry is gentle on the palate because it combines balanced acidity with a lingering dryness, including hints of aromatic seasoned wood and dried nuts
This sherry is ideal with earthy vegetables such as asparagus, artichokes, or mushrooms, the perfect accompaniment to soups and consommés, and wonderful with white meat or blue fish, especially tuna. Serve between 12C and 14C.
