A silky smooth red wine with a powerful taste, this Garum by Luis Pérez is produced from 70% Merlot, 10% Syrah, 10% Tempranillo, 9% Petit Verdot, and 1% Cabernet Sauvignon hand-harvested grapes.
Production is controlled with strict spacing of vines and night harvesting in boxes of more than 14kgs. Then, each grape variety is handled separately in stainless steel vats during first fermentation, then mixed and aged for 12 months in American and French oak barrels. The wine is not filtered or clarified and is ready to drink when bottled.
The wine tastes of ripe red fruit, spices, liquorice, coffee, and cocoa. Pair it with dried fruits and nuts, game, stews, rice dishes, semi-firm cheeses, and chocolate. Serve at 17C.
