Created from 100% sun-dried Pedro Ximénez grapes, this sweet sherry is aged for eight years in barrels.
The grapes are pressed and fermentation begins, then vinous alcohol is added to a final graduation of 15% alcohol content.
As the fermentation process is incomplete, much of the grape sugars are still in the wine when it is passed to the traditional soleras and criaderas maturation system.
This dark mahogany-coloured sherry by Fernando de Castilla has the aroma of grapes, raisins, and other fruits and a very sweet flavour. It pairs well with strong cheeses, chocolate, and vanilla ice cream. It is best served between 12C and 16C.
